Salazones Serrano

During a recent visit to the city of Elda, in the Community of Valencia, Spain, my husband and I were introduced to the "salazones". These are filets of fish cured (salted) according to ancient techniques that date back to the Romans or perhaps older. We tasted several products from Salazones Serrano, a leading producer: Cod, two types of tuna ("mojama" and "bonito") and cured roe. They were all memorable, and true to the tradition. The filets are perfect when served on toast or crackers and perhaps a glass of white wine. This food makes you feel like a part of millenary experience. It was great to see these products in so many of the fine stores in Spain. We would like to see them in our area in Michigan soon! Highly recommended.
