Its an incredible centuries old olive grove. And the attention and service is unbelievable. That they are so innovative and technically knowledgeable is definitely a plus. Learned a ton about olive oil and their oil tasting is a great experience. Will go again if I'm in the Toledo/Madrid area.

We had the awesome opportunity to share in this olive farm regeneration experience with Laura leading the tour. You will be fascinated with the strategy for organic farming and fiscal sustainability. Your first stop is meeting Laura or Guillermo at the village bus stop for personal escort (5-10 minutes) to the farmland. The earth is dry, sand like due to no rain. Laura provides straw hats and water.

We stood for various lectures in the olive tree shade to learn of the challenges and hopeful success in the dedicated effort to bring the family heir-loomed farm to the next 100 years. The tour moved to the refurbished hen house for a comfortable olive oil tasting and tapas with wine (or juice). Toilet on site here.

Do you ever wonder which olive oil to buy at the store and why some tasty so differently from others? Well, tour this olive grove and learn all about olives and olive oil manufacturing. They make organic oil using environmentally friendly methods. Laura was an amazing tour guide. Even my picky sons (9 &11) found it interesting and enjoyable. We were very lucky to be able to call and arrange this tour a day in advance. Normally, at least 48 hours in advance is needed.

Guillermo and Laura are excellent hosts! They truly have a passion for organic farming, and their olive grow is beautiful. Both shared their extensive knowledge of olives from the life cycle of a grove, the process of switching to an organic grove, and the crafting of olive oil. You'll be sure to walk away having a great experience!

5 stars! A group of five of us visited the olive groves and we can not recommend the visit enough! Guillermo and Laura were extremely accommodating, and were very flexible with the date when we found out that the bus schedule was different due to a holiday. They picked us up right at the bus stop, drove us to the olive groves (which are gorgeous) and gave us an educational tour. We learned how they farm their olives, tasted many types of olive oil, and had the most wonderful lunch with them. The food was all local and AMAZING. We ate every last bit, and we did not leave hungry. They even sell most of the food that we tried. Guillermo and Laura are extremely kind people, and we can not recommend this experience enough! Definitely for the picky one, best olive oil I could find so far, got it shipped to Sweden. These olives are definitely naturally stressed, dry irrigration if im not mistaken, and with high content of polyphenols. Taste is a bit fruity and as extra virgin as you could get. It will get you at least one good cough compared to the shelf bought you find in the store.

Qué proyecto más increible!! La cantidad de cosas que creíamos que sabíamos sobre el aceite de oliva y estábamos confundidos. Laura explica genial todo el proyecto y después, con una cata, hemos aprendido a identificar bien el aceite. Además, el lugar es precioso y todo está cuidado al detalle.
Si queréis algo diferente, no dudéis en ir y además comprar el maravilloso y espectacular aceite de oliva virgen extra ecológico que realizan.

Mi experiencia es con los productos que comercializan. Los conocí hace meses en el Mercadillo de Planetario. Compré aceite y es muy bueno. Hoy he comprado vino y almendras y también son excelentes. Se aprecia el entusiasmo en lo que hacen. Creo que hay mucho trabajo detrás de estos productos de primerísima calidad. Merecen mucho la pena.

El tour guiado por Guillermo, dueño y guía del olivar, es una experiencia muy gustosa. Desprenden en Proyecto Los Aires entusiasmo por su aceite (que es exquisito) y por su metodología ecológica, respetuosa del medio ambiente. Sales de ahí con un buen sabor de boca, literal y figuradamente. Para tomar un descanso de la ciudad y aprender a apreciar la agricultura, lo recomiendo muchísimo. Es, además, una estupenda forma de apoyar a estos jóvenes emprendedores que apuestan por calidad sobre cantidad.

Una experiencia estupenda para acercar la cultura del aceite a toda la familia y aprender a reconocer un buen producto. Trato amable y cercano y el aceite extraordinario. Nosotros degustamos también un estupendo aperitivo-almuerzo. Muy recomendable!.

Sigo al Proyecto Los Aires desde hace bastante tiempo, he visitado su olivar y habitualmente consumo su aceite. Puedo dar fe de la excelente calidad de su producto y del mimo y cuidado con el que Guillermo y Laura cuidan su proyecto.

Preciosa visita a la finca y un aceite de oliva virgen extra espectacular. Totalmente recomendable la visita. Los dueños son encantadores, aman lo que hacen y se refleja en el trato y en los productos que elaboran.

Un soleado día de noviembre pasamos unas horas inolvidables en el campo, entre olivos, disfrutando y aprendiendo con las explicaciones y la compañía de Guillermo y Laura. Su Proyecto Los Aires (PLA) recupera un olivar familiar de árboles centenarios para darle un nuevo impulso desde un espíritu natural y ecológico. El cariño y la pasión con las que Guillermo y Laura transmiten su experiencia son muy contagiosos. La historia, cultura, procesos, cuidados y equilibrio natural
El día se completó con un maravilloso almuerzo entre olivos con productos locales acompañados con el fabuloso aceite de oliva PLA obtenido de esos mismo olivos.

Ha sido mágico conocer los detalles de cómo llega a nosotros un producto como este aceite de oliva. Pero lo mejor es catarlo: El mejor que hemos probado, sin lugar a dudas. Ahora siempre tenemos uno en casa.

Un sitio estupendo para aprender como se cultivan los olivos, que diferencia hay entre los tipos de aceite y un productor de aceite maravilloso, con un gran sabor y hecho con cariño y cuidado.

Un proyecto muy interesante. Hacemos un tour entre olivos y aprendimos un montón sobre el olivar. Un aceite de muy alta calidad y una pareja de agricultores super amables :)

La cata de aceite y el paseo por el olivar, experiencias muy educativas, interesantes y divertidas; y el aceite por supuesto buenísimo. Totalmente recomendable.
