Ristorante Mater

The food, the ambience and above all the service were excellent.
The whole evening was an all-round magnificent experience.
From the home-grown ingredients, matching story the menu was based on to the perfectly implemented drinks accompaniment.

We can recommend a visit to Mater 100%. We are very much looking forward coming back!

The best Restaurant I have ever visited in my whole life. The 11 courses were all perfect in their own way and the staff was perfect as well, paying attention to every single detail (e. g. they realised I am left-handed within a few seconds). Highest recommendation for all gourmets. I hope to be here again some time.

Usually I do not recommend restaurants because can’t always like everything. We are all different, and tastes are different too, this is life. But now we have found a perfectionist paradise. We have visited the perfectly planned space with very attentive and careful staff, impeccable service and a kitchen that cannot be forgotten. I did not find any flaw in 12 dishes- “to explore”. Wish you to get your Michelin star soon.

Probably our best tasting menu and meal in Italy. Stayed at Il Borro about 1hr drive on windy roads, but don’t let the ride deter you. It’s worth every second. Exquisite cuisine, service, wine pairing, and overall experience. Beautiful atmosphere and is a must try. Spectacular and nothing but amazing things to say!

Nestled in the middle of nowhere Tuscany is one of the most thoughtful and in-depth tastings I have experienced. It was about an hour drive from our stay at il Borro. The service was top-notch from start to finish. All the plates were unique and super tasteful. Presentation was remarkable. Amazing wine list.

Atmosphere is gorgeous with a great see through kitchen and was fun to see the chefs at work.

Well worth any drive. Pricing felt very fair.

What a stunning restaurant- with beautiful views over the valley towards Poppi- but it is the food which will make us return for more! We had the exceptional tasting menu and with very well chosen wine matches too. Imaginative and delicious food! Very good service and a view into the kitchens to observe each special plate of food prepared very well. Highly recommended.

This restaurant is incredible! What a gem! The experience was one in a million. The food, the service the atmosphere was perfection. For such an experience, it is very good value (the cost would be multiplied in any city and it would probably be less authentic). I cannot recommend Ristorante Mater enough. If you are nearby, you must go !

There are many reasons for visiting Mater as soon as possible - the dishes are made from uniquely flavourful ingredients, the combinations are well thought through and the technical skill of the chefs is world class. Most importantly, though, you can ride a rising star among the elite restaurants of the world, and experience their wonderful culinary experiments, both extraordinary and grounded in local cuisine, before it will inevitably be fully booked for months in advance and the bills have some zeroes added to them. Of course, there are still some kinks being worked out, but those are only evident in comparison to some of the most famous restaurants in the world. In conclusion, go and allow Mater to delight you while you still can.

Our favourites were definitely the pasta dishes:
The chestnut truffle lasagne with juniper and haze (like the best dish of your favourite Italian grandmother)
And the smoked spaghetti with a kind of pecorino (minimalistic and just "wow").

We ate better with the mater team than at most * - *** restaurants in italy we visited before.

Wonderful experience

Sei nel bel mezzo della natura, in un posto incontaminato pieno di pace e di tranquillità. Non a caso siamo a due passi dall’eremo di Camaldoli. E questa full immersion nella natura la trovi dentro i locali di Mater e soprattutto nei piatti di Filippo Baroni chef e patron del Mater insieme alla moglie Marta Bidi del locale. Quest’ultima è la responsabile della sala e soprattutto dell’accoglienza degli ospiti. Immediatamente, grazie ai suoi modi cordiali vieni accompagnato all’interno del locale dove si continua a percepire il contatto con la natura grazie alla presenza di piccoli tronchi di alberi appoggiati sul pavimento. Da una luminosa vetrata si può ammirare il verde panorama e dall’altra parte della sala invece la bellissima cucina a vista. I tavoli sono ben distanziati e riempiono con eleganza la sala. La cucina di Filippo Baroni è un sincero tributo a questi luoghi e a tutto il territorio circostante. Le erbe la fanno da padrone e vengono ben bilanciate, ma mai in maniera banale, insieme agli altri ingredienti tutti di grande qualità. I due menù degustazione sono perfetti per conoscere e apprezzare le idee e la fantasia dello chef. Tra i piatti assaggiati segnalo il plin di faraona, rucola, olive - l’anatra, pomodoro secco, carciofo alla brace
- i pomodori , granita al bitter, dragoncello e il pane fatto da loro con grani antichi. Interessante e ben nutrita la carta dei vini.

Un ristorante elegante e raffinato e delle persone che meritano il viaggio. Un ambiente rilassante che ti fa apprezzare al massimo tutti i sapori della loro cucina. Una perla nel Casentino …..

Da Mater un’esperienza sensoriale unica. Un viaggio, fatto di colori, sapori e profumi che avvolgono, stupiscono e saziano. In una splendida cornice, un ambiente accogliente e raffinato, curato nei minimi dettagli. Un ringraziamento particolare a tutto lo staff per la professionalita’ gentilezza e simpatia e a Valentina e Gaspare che hanno creato le condizioni favorevoli per questo incontro. La cucina della foresta

Ci vuole tempo, pazienza e voglia di guidare per arrivare al Mater ma quando si insinua il desiderio che in un certo ristorante bisogna passarci beh…. allora si deve trovare l’occasione giusta e andare. È una bella mattina soleggiata di inizio settembre quella in cui ci mettiamo in macchina e pronunciamo la frase “ Ehi Mercedes…. Vai a Moggiona“ Da quel momento al nostro arrivo passeranno circa due ore , viaggiando tra i boschi ombrosi e le fitte foreste dell’Appennino Tosco-Romagnolo , attraversando paesaggi che faranno meglio sopportare la lunghezza del viaggio. Moggiona è un piccolissimo, grazioso paesino di poco più di sessanta anime dove si potrebbe immaginare di incontrare, al massimo, una modesta locanda per sfamare qualche occasionale turista colto da un improvviso attacco di fame . E invece, all’interno del bel resort “I tre baroni” , trova la sua giusta collocazione il Mater, il ristorante gourmet dello chef Filippo Baroni e di sua moglie Marta : un elegante locale con una bellissima cucina a vista dove sono certo potremo trovare la meritata ricompensa alle nostre fatiche turistiche. E così sarà. Attraverso il percorso degustazione scelto (In superficie, ndr) avremo modo di apprezzare la felice creatività di questo giovane e coraggioso chef basata su una cucina del territorio rivisitata e corretta ma sempre concreta e bilanciata. L’amore per la sua terra e la voglia di raccontare l’essenza di questi luoghi magici e così intrisi di spiritualità all’interno delle foreste Casentinesi ( l’antico eremo dei frati Camaldolesi è a due passi da qui) rappresentano il fil rouge della filosofia gastronomica di Baroni che diventa la voce narrante di questa piccola ma felice realtà .
Il risultato: una bellissima ed inaspettata esperienza da mettere nell’album dei ricordi belli. Ed a quel punto affrontare il viaggio di ritorno non sarà altro che una piccola formalità.

Sala ampia con vetrata sulla vallata. Dall’altro lato della sala altra grande vetrata con cucina a vista.

Alcune delle porzioni possono sembrare piccole ma ci si accorge che in realtà sono studiate per non satollare ed impedire di gustare le successive.
Piatti studiati per dare accostamenti di gusto significativi.

Cenare al Mater vuol dire vivere un'esperienza e non solo assaporare dei buoni cibi. L'accoglienza è calda e nello stesso tempo professionale.Il locale è ben arredato, spazioso senza essere troppo dispersivo. La vista sulla valle (e su di un magnifico orto) toglie il fiato. Per una scelta, a mio parere encomiabile, il Mater accetta solo poche prenotazioni per poter seguire gli ospiti al meglio. Abbiamo cominciato con un aperitivo accompagnato da stuzzichini creati con fantasia e gusto. La cena è basata su piatti creati per accostare sapori dell'orto con i frutti dei boschi del Casentino. Tutto composto sapientemente per stupire e contemporaneamente deliziare il palato. Decisamente un'esperienza da ripetere e consigliare.
