The Assembly

Cool location and ambiance. Loved the portion size as my wife and I were able to each have an appetizer entree and dessert. Grilled calamari was a great start and finally a little heat you don’t always find in food in the valley. Steak cooked perfect and rested nicely while the corn with the chicken was amazing. The lemon meringue dessert was perfectly balanced. ( pictured) Servers were all polite and everyone worked well together it seemed. We look forward to another date night their in the future.

We live in Eagle and love going to the Assembly for a date night or dinner with friends. But last week they really knocked it out of the park! We had a private party there for my wife's birthday. I can't tell you how easy it was to plan. Jaimie and Caleb had different price options and tiers for us, we picked one and it was so easy. The attention to detail they have for everything is so precise. The signature drinks they created were amazing. The staff was so attentive. The food- of course if you've eaten here you know- was amazing. Don't forget to ask for a special custom desert from them if you have your own party- homemade key lime pie was so good!! Thank you Assembly for hosting such an awesome party- many people said it was the best party they've been too!

We’ve had dinner at the Assembly a few times now and it’s been great at every single occasion.
All the cocktails, appetizers, entrees, deserts and wines are wonderfully crafted and “assembled”.
The service is always
very friendly, knowledgeable and professional.

If you were in Europe you’d have a Michelin star for sure.

Best restaurant in Eagle County. I’m literally writing this, sitting on a bench outside the restaurant, minutes after our dinner. The wait staff was friendly and knowledgeable. Food is tapas style and came quickly, in the best order for your palate. Every single dish that came to our table was amazing. The chicken thighs and saffron rice was so good it almost made me cry. Plan on getting 2-3 dishes per person. Save room for desert!

This is such a lovely place. The atmosphere is fresh and welcoming. The service was wonderful and the food and cocktails were fantastic. Definitely recommend their stuffed fig and steak plates. Everything was bursting with flavor. We cannot wait to go again and we look forward to their Fall menu.

Holy moly - super impressed by every aspect of our dining experience at The Assembly! The entire menu was diverse and inspired and upon presentation it was evident the amount of time and energy that went into each dish. The wait staff were super helpful and accommodating and the interior was stylish and inviting. Can’t wait to return, and so so happy that a restaurant like this now exists in Eagle. THRILLED to have an upscale option in Eagle! The food is absolutely outstanding. Having grown up in a foodie part of Atlanta, toughest part of Eagle for 5 years has been the dining out options. The Assembly is the perfect date night, or girls night out location...or (GASP) a place we can bring company without having to drive up valley! I rode my bike there and back and loved every second of it. Great plate size and selection, which allows for easy sharing. Favs (summer 2020 menu) are the stuffed dates, beet salad (best ever), poke, lobster pasta. Seriously, the salad dressing on the greens of the beet salad could be it's own thing... it's that good. Hopeful that the menu is seasonal, as we're eating here often (3x in 5 weeks) and will love a change in menu options over time. Looking forward to many great memories here!

....every bite was absolutely delicious...the scallops were perfection...the braised short rib was so good. Friendly staff and the refined menu was short and to the point...the chef's prepare and deliver the highest quality food. Highly recommend and will return next time we are in town.

My wife and I had a lot of fun snagging a walk-in table with our 8 year old daughter for a "Grown-up" quick dinner. We all ordered off the main menu. Staff was welcoming and friendly! Portions ARE smaller than other local eateries, but it's great to have something different from the Chicken wing/taco/pizza options in the area.

Consistently INCREDIBLE and a wonderful addition to Eagle and the Valley. We have been multiple times and have always had a wonderful experience. The food is seasonal and creative and the cocktails and wine selection is excellent. Order maybe 2-3 plates per person.

We have been trying to get here and we are glad we did. This is a wonderful option to the over priced disasters up valley. Everything was excellent. Creative, tasty food, wonderful people. Sit outside and people watch.

A hidden gem just off of i70. Had the Al Pastor pork chop and a mezcal old fashioned. Incredible.

Staff was super friendly. Great vibe overall. Will be coming back for sure.

Amazing!!!!!! flavors without the wonderful snootiness Vail has to offer. 😉 On an honest note the chefs at the Assembly are doing a wonderful job in bringing well balanced flavors. Give it a try it will not disappoint!!!!

Great neighborhood, foodie-type restaurant. Menu changes with the seasons and features local ingredients and flair. Special menu contained Rogan Josh, which was ridiculously delicious! We'll be back!!!!

Everything us prepared fresh!! Pastries are great! Had the avocado toast...absolutely delicious, plus great coffee!! Service was superb!

AMAZING. Great wine list great flavors. Super fun tapas style cuisine. We need more restaurants like this.

My husband and I joined them on the patio during their first week of opening and we've been hooked. Whenever we have guests in town, this is our first stop.
